For just two days, on 31 October and 1 November 2026, Chef Lukas Nagl will take over 665°F at Andaz Singapore with a special five-course dining experience inspired by his acclaimed Restaurant Bootshaus in Austria.
Located along the shores of Lake Traunsee in Austria's scenic Salzkammergut region, Restaurant Bootshaus holds one Michelin star and one Michelin Green Star in the 2026 MICHELIN Guide Austria. Chef Lukas was also named Gault&Millau Austria's Chef of the Year in 2023.
Known for combining traditional Austrian ingredients with contemporary techniques and Japanese influences, Chef Lukas brings a distinctive approach to alpine cuisine. The specially curated menu begins with Austrian Nigiri featuring dry-aged trout and Cucumber Horseradish Ice Cream with trout roe, buttermilk, and camelina.
Freshwater fish takes centre stage with Smoked Alpine Char served with whey, sorrel, and potato, alongside Pike Perch paired with green beans, peach, and hazelnut. Other highlights include Saddle of Lamb with blackcurrant, mustard, and romaine lettuce, followed by a refreshing dessert combining wild strawberry, elderflower, spruce, and rhubarb. The five-course menu costs S$135++ per person, with a wine-pairing option available at S$198++.

Not quite ready to commit to a five-course meal? Austrian Gourmet Week also offers a more casual way to discover Austria's culinary traditions! From 26 October to 6 November 2026, Alley on 25 will serve a special à la carte menu featuring three Austrian classics prepared using Chef Lukas' recipes.
Start with Viennese Beef Stock, a comforting broth served with veal liver dumplings and chives. For something heartier, try the Styrian Fried Chicken, accompanied by cranberries, potato salad, and pumpkin seeds.
And don't forget dessert! Those with a sweet tooth can look forward to Kaiserschmarrn, Austria's beloved shredded pancake served with raisins, plum röster (plum compote), and vanilla ice cream. With dishes starting from S$16++, it's an approachable option for anyone curious about Austrian food, whether you're planning a lunch date or dinner with friends.

Beyond the food, Austrian Gourmet Week offers a glimpse into one of Austria's most picturesque regions. Surrounded by mountains and shimmering lakes, Salzkammergut is known for its 76 lakes, charming villages, and breathtaking alpine scenery. It's also home to the famous lakeside town of Hallstatt, part of a UNESCO World Heritage-listed cultural landscape.

But the region offers more than postcard-worthy views. Its culinary heritage is shaped by freshwater lakes, alpine pastures, and generations of local producers. At Restaurant Bootshaus, located within Hotel Das Traunsee overlooking Austria's deepest lake, Chef Lukas works closely with local fishermen and organic growers to create dishes celebrating seasonal ingredients.
It's this connection to nature that makes his cooking special, offering Singapore diners a delicious introduction to Austria's alpine traditions. Who knows? It might even inspire your next European getaway!
