Take some bacon and I’ll put it in a pancake” — remember this catchy song from the cartoon series Adventure Time? If not, I suggest looking it up quickly on YouTube! You might find yourself humming it as you whip up these fluffy bacon pancakes.

Note: This bacon recipe is equivalent to 14 pancakes.

Ingredients:

  • 2 cups of bacon (cooked & chopped)
  • ¼ cup of coconut oil
  • ¼ cup of maple syrup (could also be honey, as an alternative)
  • 1 cup of milk (can also be a non-dairy type)
  • 1 teaspoon of vanilla extract
  • 2 eggs
  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda

Steps:

  1. Cook the bacon in a skillet, then chop into small pieces after a few minutes.
  2. Optional: collect the bacon fat from the skillet and reserve for later when you’re cooking pancakes. This will give them a further bacon-y flavour!
  3. In a large microwave-safe bowl, melt the coconut oil. Stir in the maple syrup, milk, vanilla extract, and eggs. In case the coconut oil starts to build up, place it back into the microwave and heat for around 20 seconds.
  4. Stir in the flour, baking powder, and baking soda until well combined.
  5. Gradually add the cooled bacon pieces.
  6. In a greased skillet, cook ¼-cup portions of the batter for around two minutes on one side. Flip and then cook for one minute. Repeat until you’ve gone through the whole batter!
  7. Optional: Add extra bacon, maple syrup, and other toppings of your choice!

Rise and shine to a hearty breakfast of bacon, eggs, cheese, and lots of potatoes! One bite out of this skillet breakfast hash, and you’ll probably forget to count those calories. Then again, why should you? Life’s too short — skip it just this once!

Note: This bacon recipe is good for three to five people.

Ingredients:

  • 700 grams of potatoes (about 4 medium-sized ones)
  • 2 tablespoons of olive oil (coconut oil works well, too)
  • 200 grams of chopped bacon
  • 4 large eggs
  • ¼ cup of shredded cheese (mozzarella or cheddar)

Steps:

  1. In a large skillet or pan, heat the oil over medium heat. Dice the potatoes then add to the skillet.
  2. Cover the skillet with a lid to cook the potatoes while also stirring every four to five minutes. This will take around 15 minutes or until they’re crispy and golden.
  3. Add the bacon pieces and fry while stirring occasionally. Do this for 10 minutes, or until the bacon turns crisp.
  4. Optional: Add a dash of pepper and spring onions, then stir.
  5. Using a spatula, make four wells in the bacon hash. Then crack an egg into each well and arrange some shredded cheese around each egg.
  6. Fry until the whites are set and the yolks are cooked according to your preference.
  7. Optional: Sprinkle some parsley, chilli flakes, and more pepper.

3. Bacon breakfast cups

I’m sure you’ve heard about egg cups, but how about with some bacon wrapped around ‘em? And yes, it’s as delicious as it looks! You can even enjoy these bacon breakfast cups on-the-go, especially on mornings when you just can’t be bothered to sit down for brekkie.

Note: This bacon recipe uses a six-cup muffin tin! Adjust accordingly if your tin is different.

Ingredients:

  • 6 slices of bacon
  • 6 eggs
  • ¼ cup of shredded cheddar cheese
  • Salt, to taste
  • Pepper, to taste

Steps:

  1. In a pan or oven toaster, partially cook the bacon strips. These must be pliable and not at all crisp. Drain on paper towels and let cool for a bit.
  2. Preheat the oven to 400°F. Add some non-stick cooking spray to the muffin tin.
  3. In the muffin tin, place one slice of bacon per cup and wrap in a circle.
  4. Crack an egg into each cup. Alternatively, you can beat the eggs first before transferring into the cup.
  5. Sprinkle salt, pepper, and cheddar cheese evenly into each cup.
  6. Bake for 10 to 15 minutes, or until the yolks are cooked according to your preference.
  7. Optional: Sprinkle on a bit more pepper or even chives
  8. To remove each cup, run a knife around the edges to loosen.

Good ol’ French toast stuffed with juicy bacon? Don’t mind if we do! It’s soft and chewy on the outside, and crunchy on the inside with a savoury punch. We recommend pairing your bacon-stuffed French toast with a cup of coffee or hot cocoa.

Note: This bacon recipe is equivalent to four French toast sandwiches.

Ingredients:

  • 8 tablespoons of softened cream cheese
  • ⅓ cup of brown sugar
  • 8 slices of white bread
  • 8 slices of cooked bacon
  • 4 eggs
  • ½ cup of whole milk
  • 1 teaspoon of vanilla extract
  • 4 teaspoons of butter
  • Vegetable oil

Steps:

  1. In a medium bowl, mix the cream cheese and brown sugar
  2. On one side of each bread, spread the cream cheese mixture
  3. Sandwich two slices of bacon between two bread slices. Make sure the sides with cream cheese spread are facing in. Repeat for the other remaining slices.
  4. In a separate bowl, whisk together the milk, eggs, and vanilla extract.
  5. Dip each sandwich in the egg mixture. But make sure it doesn’t soak through to the middle where the bacon is, as to prevent it from turning out soggy.
  6. Heat a large nonstick pan over medium heat. Then add butter and a bit of vegetable oil
  7. Cook each stuffed French toast until it’s golden brown on the bottom. Flip over until the other side is also the same colour. Add more butter and oil if necessary.
  8. Optional: Cut each piece diagonally in half and drench with maple syrup!

5. Bacon avocado fries

Who would’ve thought bacon and avocado could make a good combo? Well, they do! Together they make for tasty ‘fries’ that are low-carb and semi-healthy (come on, let’s be realistic here). And they’re super easy to make, too!

Ingredients:

  • 3 avocados
  • 24 strips of slightly cooked bacon (thin)

Steps:

  1. Preheat the oven to 425ºF. Line a baking sheet with aluminium foil and fit with a metal cooling rack.
  2. Slice each avocado into eight equal-size wedges. So overall, you should have 24 wedges.
  3. Carefully wrap each wedge with a cooked bacon strip. Make sure the bacon used is the thin variant. Also, don’t use raw bacon, since the avocado will turn bitter when placed in the oven for too long!
  4. Place the wrapped avocado wedges on a baking sheet with the seam side facing down.
  5. Bake for around 5 to 10 minutes until the bacon turns crisp.
  6. Optional: Serve with your preferred dip of choice. We recommend Chipotle sauce or ranch dressing

6. Bacon onion rings

Here’s another unlikely pairing that also makes for a delightful snack! Yep, even if you’re not exactly a fan of onions. Trust us, this will make you change your mind faster than you can say “Yes please.”

Ingredients:

  • 1 large yellow onion
  • 12 strips of bacon
  • ¼ cup of brown sugar
  • ½ teaspoon of cayenne pepper

Steps:

  1. Preheat the oven to 400°F. Line a baking sheet with aluminium foil and fit with a metal cooling rack.
  2. Cut the onion into ½-inch pieces. Then separate every other inner ring, so that one would-be finished onion ring has two rounds of onion.
  3. In a separate plate, stir together the brown sugar and cayenne pepper. Then lay bacon on a plate and coat with the mixture.
  4. Carefully wrap the onion rings with bacon, then place on the baking sheet.
  5. Bake for 30 to 35 minutes or until the bacon turns crisp and golden.
  6. Optional: Serve with your preferred dip of choice. We recommend ketchup or ranch dressing

7. Bacon jam

Making jam to preserve seasonal fruits is nothing new — but how about bacon? That’s right, bacon jam is a thing and it’s a lot easier to make than you think! Pair it with your fave grilled cheese, burger, or even cheese and crackers.

Ingredients:

  • 1 pound of bacon, cut into 1-inch pieces
  • 1 onion, finely chopped
  • 4 shallots, minced
  • 2 cloves garlic, minced
  • ½ cup of brown sugar
  • ¼ cup of maple syrup
  • ⅓ cup of apple cider vinegar
  • 1 teaspoon of chili powder

Steps:

  1. In a medium saucepan over medium heat, cook the bacon until crispy.
  2. Transfer bacon to a paper towel-lined plate. Reserve about a tablespoon of bacon fat in the pan for later use.
  3. Reduce heat to medium-low, then add onion and shallots to the pan. Cook and stir often for about 15 minutes until the onions are caramelised.
  4. Stir in garlic, brown sugar, maple syrup, vinegar, chili powder, and cooked bacon. Bring mixture to a simmer then reduce heat to low.
  5. Cook for about 7 to 10 minutes, until the liquid has reduced and thickened, and the onions turn jammy.
  6. Let cool before transferring to a jar.
